Coming up with creative recipes has been a fun task and this recipe definitely deserves a post because it is SO full of flavor and a great sources of carbs, protein, and healthy fats. 👌🏻
Bunless Portobello Burgers
1 lb ground turkey
1/2 lb ground, mild italian sausage
McCormick steakhouse onion burger seasoning
2 small sweet potatoes
4 large, fresh, Portobello mushrooms
2 white onions, thinly sliced
Braggs liquid aminos
high quality olive oil
Tessamae's ranch dressing
sea salt and black pepper
grass fed butter
Heat a small skillet over low-medium heat with a tbsp of butter, throw in sliced onions and cook until softened/caramelized- about 10-15 min. I found keeping a lid on top helps them soften much quicker and stirring occasionally.
While onions are cooking, mix ground turkey and sausage together with mccormick seasoning and braggs aminos. Mix well with hands and form into 4 patties.
I don't always have time ahead to cook sweet potatoes, so most of the time I throw in microwave. (Please no one give me crap for using it....we do.) Microwave potatoes about 8 min or until softened all the way through.
While potatoes are cooking, in a cast iron skillet over medium heat, add a little butter just to cover bottom of pan. Cook burgers about 5 min. each side.
While burgers are cooking, clean off mushrooms and remove gills. Salt and pepper both sides and on the inside, season well with McCormick seasoning and olive oil. Cook in same pan as burgers about 5 min each side too.
After burgers and mushrooms are done, the onions an potatoes should be ready. Cut potatoes in half and peel skin away.
On a plate, lay your mushroom down (so it's like your bowl), top with half a mashed sweet potato, add the burger, then caramelized onions, parsley, and drizzle with a little dressing. Get ready to feast! Enjoy!
