One of my favorite workouts is spinning and unfortunately there aren't any good spin class options around here. When I heard about Peloton I was so excited and loved the idea but hated the price - think 2k ++ :-/ That's when I started doing some research on how I could essentially create my own spin classes at home. I've found what I believe is to be the best bike for your buck that is stable, durable, quality, and light weight enough that you can put together and roll anywhere! So check out all my essentials below to create your own spin class at home!

Peloton On-Demand Membership (You can do a FREE 14-day trial to see if you like it. I love mine. I pay $12.99/month for it and you can customize whatever kind of class you want to take down to taking live classes, on-demand, certain class lengths, even the type of music!)
Obviously, this isn't a must-have for spin classes but I really love mine and it's a great tool to track your level of activity - it has the option to track an indoor cycling class too which I love. I use mine for every workout - if you don't have one already it's definitely worth investing in! I rarely take mine off! Apple Watch
This Lululemon water bottle is perfect for spin classes because they are made specifically for cycling. I've had mine FOREVER - super durable, easy to use (love the squeeze feature), and cute!
I really, really love beets but rarely eat them unless it's on a menu just because they can be a mess and time consuming to prepare, but I found pre-packaged golden beets at Trader Joe's and knew I had to get a few bags and would find multiple uses for them. I love a good beet salad so I came up with this little warm, spring salad recipe.
Unfortunately, many people think eating salads have to be boring, bland, or the same thing every day, but this spring salad recipe proves it is anything but! It requires a little prep/cook time but I can ASSURE you it is well worth it. It's the second day in a row I'm eating it for lunch!
The warm beets start to melt the soft goat cheese.....the sweetness from the cool strawberries paired with warm, crispy prosciutto....the sweet and tangy vinaigrette drizzled over it all just pairs absolutely PERFECTLY!!! Ok, i'm drooling....on to the recipe.....
WHAT YOU NEED
(honestly, I don't measure it, I always just eyeball it and taste as I go along, so start here and adjust according to your taste)
WHAT TO DO
Start off by heating a skillet over medium heat and add prosciutto. Cook just until crispy and slightly browned on either side. Set aside and let cool and crisp up.
In the same pan add in your chopped beets and drizzle with a little olive oil. Cook until they start getting golden and warmed through.
While those are cooking, chop your strawberries into bite sized pieces and chop your chives.
When beets are almost done throw in 1 heaping tbsp of pine nuts and let them toast up and finish with the beets.
Set everything aside and whisk together dressing.
Chop up lettuce into smaller pieces, add crumbled goat cheese, then add warm beets and pine nuts, crumble prosciutto, top with strawberries and chives and then drizzle with dressing! Toss well and enjoy! Please let me know what you think!
