I love these type of meals because they really don't require a recipe; you just use what you have in your fridge or whatever you're feeling for dinner that night and throw it all in. If you like a Mediterranean flavor, throw in some kalamata olives and sundried tomatoes. If you're feeling some with an Asian flair, add some soy sauce, sesame seeds, and cook with sesame oil. This was just veggie inspired for me, I think it'd be great with shredded chicken or sausage crumbles too!
- 3 c rice
- 3 c fresh spinach
- 2 diced tomatoes
- 1 medium yellow onion, diced
- 1 tbsp minced garlic
- 1 small container baby bella mushrooms
- 3 large carrots, finely grated
- 1 container chicken broth
- 1 1/2 tsp curry powder
- 1 tsp garlic powder
- salt + pepper
- olive oil
Add diced onion and cook until translucent.
Add in tomatoes and cook until they soften, 3-4 min.
Add in spinach, rice, mushrooms, grated carrots let cook for a minute then add in chicken broth.
Season with curry and garlic powder, lots of s+p, adjust seasoning as neccessary.
Simmer for 20 minutes until rice is softened.
Turn off heat and enjoy garnished with fresh parsely and a squeeze of lime!
