Luckily I really like asian dishes so I had all the ingredients on hand, minus some chicken. Go to store and stock up on the ingredients and make today or save for a rainy one.
3/4 c rice wine vinegar
1/3 c lite soy sauce
1/3 c honey
2 tbsp minced fresh ginger
2 tbsp fresh minced ginger
2 tbsp sesame oil
1 tbsp asian chili-garlic sauce
16 oz uncooked soba noodles
1 small yellow onion
1 tbsp sesame seeds
1 handful fresh parsley
1 c shredded rotisserie chicken
1 container chicken broth
Chop yellow onion into slivers and sautee with sesame oil on med heat until caramelized - about 10-15 min.
Whisk together first 6 ingredients in a medium bowl, set aside.
Cook noodles according to package. Drain and return to pot. Add in sauce mixture, one container of chicken broth, shredded chicken, and sauteed onions. Mix well and let simmer for 5 minutes. With a pasta fork, pull out desired noodles into your bowl, then with a ladel top off with broth. Garnish with parsely, sesame seeds, and drizzle with siracha and ponzu sauce.
Grab a bunch of napkins and don't worry about manners eating this bowl.....you'll be slurping up the noodles, with broth running down your chin, breaking a little sweat. But it's dat good!
